Here is the Pac-Man cupcake/cake that I made during/for a New Year's celebration! Obviously this was rushed and a little messy...I could do a lot better, but I only had about an hour and a half and I had three boxes of cake mix to go through to make enough. Devil's food and angel food cakes topped with whipped chocolate icing. The cherries are made from peanut M&M's, every other decoration is rolled fondant pretty much.
Don't judge for neatness please! I wish I had had more time on this cake, but I didn't so everything's kinda jumbly.

♥ Your cupcake history: I've always enjoyed baking, but it's only been in the last 2 years that I've really gotten into it, and cupcakes in particular. I'm a bit anal about my cupcakes, and a bit of a perfectionist, especially with the icing, so I tend to bake as a solitary thing, and don't like when people try to help me, LoL!
♥ Why you like cupcakes: I'm a sweet addict, and I love the combination of cake and frosting. I work as a nanny, so it's a great project you can do with kids (although I will never eat anything a kid makes...) I'm well known for my cupcakes in my circle of friends, and if I'm organising a party, everyone expects there to be cupcakes there!
♥ Anything to share?: Here are some pictures of things I have made. I'm limited to things that I have pictures of on my facebook, as I am overseas!
I am *famous* for my Raspberry Swirled Vanilla cupcakes with White Chocolate frosting. The secret is that they actually come out of a box, and I haven't been able to find anything that replicated the frosting so well!

♥ Your cupcake history: I've made and eaten fairy cakes, our mini English equivilent to cupcakes since I was little, they're a party staple! However, these bites never lived up to the cuties I have seen printed on textiles, cups, cushions, like pop art, almost as a brand. The glace cherry topped cupcake was what I soon learned to be an invention of America, a perfect opportunity to have a beautiful cake in a controlled portion, big enough to satisfy and small enough to not allow anyone to share. Being vegan, I headed to babycakes and wholefood market in New York and tried carrot cupcakes. MMMMM. I have since made at home from vegan cupcakes will take over the world rose and pistachio, carrot raisin, vanilla, chocolate, lemon gem, banana split, and intend to make more.
♥ Why you like cupcakes: They're small, cute, allow for creativity, sweet and sweet things satisfy my sweet tooth.

♥ Why you like cupcakes: How can people not enjoy cupcakes? I may not have a sweet tooth, but I love making them for people who do- they're a great way to relax, and coming up with new decorations and flavour combos is always fun- I can't get enough of cupcakes!!
♥ Anything to share?: I managed to find an amazing book written by the owner and makers of cupcakes at The Hummingbird Bakery in London. It's an amazing book, and worth it's weight in gold, even if it is £15.99 (then again I unwittingly bought it about two streets away from said bakery, so that fact probably bumped the price up a little bit)
 The Green Tea cupcakes in this book are to DIE FOR~

Hey guys. What's your tip of choice to create beautiful swirls of frosting like the cupcakes you see in the supermarket? (Like so: http://agiletools.files.wordpress.com/2009/06/cupcake.jpg). What makes the best icing consistency for said swirls? I've never been able to make a picturesque cupcake, but gosh darnit, tomorrow is the day I will TRY! |

♥ Your cupcake history:Me and my sister used to bake them with our nanny all the time when we were little (promise we're not as posh as that sounds) and then fo an art project last year I ended up buying a cupcake recipe book (to cut up and use the pictures) but I just couldn't resist the cupcakey goodness and ended up using it for cooking instead. Since then I've been slightly obsessed bu cupcakes and use any excuse I can find to make/decorate/eat them :D
♥ Why you like cupcakes: They're so small and cute (not to mention tasty) and perfect for pretty much any occasion, I'm always baking them for birthdays, christmas and cake days!

Ok, I know this isn't a cupcake, but it is a cake. Next time I make this cake, I'm making it as cupcakes instead, so it is relevant.
This is my grandmother's red velvet cake recipe, with the yummy flour-based frosting (which is soooo good and better than the cream cheese one).

I have a few recipes for average sized cupcakes. I was hoping to use those recipes in my 1 cup muffin pans. I was wondering how I figure out how long I should bake the much bigger cupcakes for? Is there some sort of formula or should I just poke at them with a toothpick? |
